Ingredients:
- Hard Boiled (Easter) Eggs
- Pasta (I had a 1/4 box each of ditallini and ziti in the pantry so that's what we used)
- Ham diced or chopped (use your leftover Easter ham or deli ham)
- Shredded Cheddar Cheese
- Crumbled Bacon
- Chunks of fresh tomato
- Cucumber slices
- Onion chopped
- Salt & Pepper to taste
- Italian & Ranch Dressing
Directions:
Boil pasta, drain and let cool. Dice your tomatoes and onions and slice cucumbers. Put veggies in a big bowl. Add salt and pepper to taste and a splash of Italian Dressing, stir to coat. Add your pasta to the bowl, add a little more Italian Dressing and stir to coat and combine with the veggies.
Layer your plate: pasta and veggies, then top with a row of diced/chopped ham, a row of chopped hard boiled egg, a row of shredded cheddar and finally a row of chopped bacon.
You can then decide whether to eat with Italian Dressing or as I did with some Ranch Dressing on the side!

That sounds so yummy! Can you believe we didn't do Easter eggs this year? I kept them so busy with Spring Break activities and completely forgot! Hopefully I won't forget where I put the egg dye kit for next year!
